From the vineyards of Bordeaux to the wine glasses of East Dallas — what an incredible month of wine, food, friendships and discovery!
October has been all about Bordeaux at I Want That One, and what a month it’s been!
We started the month exploring the region ourselves, meeting the people behind some truly wonderful wines, visiting beautiful châteaux, hearing their stories and, of course, tasting some incredible Bordeaux wines along the way.
And what better way to celebrate those experiences than to bring a little bit of Bordeaux home to Dallas and share it with our friends and customers?
But first, let’s go back to where it all started…
From Bordeaux, France…
Fresh off celebrating my 60th birthday in Porto, David and I continued our wine adventures through Spain and into Bordeaux, where we had two wonderful days visiting some remarkable wineries.
Day One: Exploring the Right Bank
Our first stop was Château Tour Saint-Christophe in Saint-Émilion, with its spectacular terraced vineyards and breathtaking views. An incredible introduction to the Right Bank, and a wonderful opportunity to learn more about the château, its wines and the beautiful terroir that makes this part of Bordeaux so special.
Next, we visited Clos Systey, where we spent time with Fanny Dulong, discovering a more intimate side of Bordeaux winemaking. We tasted some beautiful wines, including their Crémant made entirely from Sémillon, and learned more about their approach to organic and biodynamic viticulture.
We finished our Right Bank adventure in Pomerol, visiting Château Clinet, where we had the opportunity to taste Château Lécuyer. What a wonderful way to end the day, enjoying exceptional wines and hearing firsthand the stories behind them.
And yes, there may have been a glass or two of wine along the way!

Day Two: Over to the Left Bank!
Our second day took us across to the Left Bank, starting at Château Charmail in the Haut-Médoc.
Here we explored the château and its winemaking approach, including the use of different vessels for aging wine. It’s fascinating to see how much thought, experimentation and care go into creating wines that are both expressive of their origins and wonderfully approachable.
Next was Château du Glana in Saint-Julien, where we tasted Château Lalande and enjoyed another fabulous visit. Beautiful vineyards, incredible wines and, once again, the opportunity to meet the people who make it all happen.
Our final stop was Château Lynch-Bages in Pauillac, and what an experience that was!
From the impressive architecture and extraordinary winemaking facilities to the barrel rooms and wine library, this was a visit to remember. We also had the pleasure of discovering more about Château Haut-Batailley, including a vertical tasting of Verso, its second wine.
Two days, six incredible winery visits, some fabulous people and so many wonderful wines. We came home with plenty of photographs, lots of stories and an even greater appreciation for everything Bordeaux has to offer.

…To Bordeaux in Dallas!
On Tuesday, October 20, we brought those experiences home to I Want That One for a very special evening celebrating the fresh, exciting and approachable wines of Bordeaux.
Our guests joined us for an eight-wine journey through the region, accompanied by photographs from our travels, personal stories from the wineries we’d visited, and some absolutely delicious Bordeaux-inspired food.
We wanted to show a different side of Bordeaux.
Yes, Bordeaux produces some of the world’s most prestigious and collectible wines. But there’s SO much more to discover!
Fresh whites, beautiful sparkling wines, expressive reds and wines that are ready to be opened, enjoyed and shared today. No special occasion required!
Eight Wines, Two Banks and Plenty of Stories!
We kicked off the evening with a gorgeous JC Calvet Crémant de Bordeaux Rosé. Fresh, lively and full of beautiful bubbles — the perfect way to welcome everyone and get the evening started!
Then it was time to explore the Left Bank, with three reds from châteaux we’d personally visited just a few weeks earlier:
- Château Charmail 2021 — Haut-Médoc
- Château Lalande 2023 — Saint-Julien
- Haut-Batailley Verso 2022 — Pauillac
As we tasted each wine, we shared photographs of our visits, talked about the people we’d met and brought a little of our Bordeaux adventure to life.
There’s something really special about pouring a wine and being able to say, “We were standing in those vineyards just a few weeks ago!”
Before heading across to the Right Bank, we refreshed our palates with a delightfully crisp Château La Fréynelle Bordeaux Blanc, from Entre-deux-Mers.
A wonderful reminder that Bordeaux isn’t just about red wine! The region produces some incredibly fresh, vibrant whites that deserve a place at the table.
Then we finished our evening with three wonderful Right Bank reds:
- Château Tour Saint-Christophe 2021 — Saint-Émilion Grand Cru
- Château Tournefeuille 2023 — Lalande-de-Pomerol
- Château Lécuyer 2023 — Pomerol
Once again, we were able to share our personal photographs and stories from Château Tour Saint-Christophe and our visit to Château Clinet, where we’d tasted Château Lécuyer.
From the Left Bank to the Right Bank, from sparkling rosé to beautiful Bordeaux Blanc, we explored just how diverse and exciting Bordeaux can be.

And Of Course, There Was Food!
No great wine evening is complete without some fabulous food!
We were delighted to have Eddie Ledesma-Porter of May’s Eats create a delicious selection of Bordeaux-inspired dishes, thoughtfully paired with the wines we were pouring.
The food was wonderful, the pairings were fabulous, and it made the entire evening that much more special.
A huge thank you to Eddie for helping us bring a little taste of France to East Dallas!
Great Wine. Great Food. Even Better Company.
For me, this is what I love most about what we do at I Want That One.
It’s not simply about opening a bottle of wine.
It’s about discovering something new, sharing experiences, telling stories, learning a little along the way and, most importantly, bringing people together.
Our Bordeaux evening was filled with wonderful conversations, plenty of laughter, a little wine education, some great food and a fabulous sense of community.
And our guests even went home with a little Bordeaux SWAG, courtesy of the wonderful team at Bordeaux Wines!
A huge thank you to everyone who joined us, to Eddie and May’s Eats, and to the team at Bordeaux Wines for helping us celebrate this incredible region. I want to urge everyone to go check out the Bordeaux Wines Instagram @Bordeauxwines and there is so much more info on their website
So, Let’s Rethink Bordeaux!
If there’s one thing we hope everyone took away from the evening, it’s that Bordeaux doesn’t have to be intimidating, expensive or reserved for some special occasion years down the road.
There’s an exciting world of fresh, approachable, delicious Bordeaux wines just waiting to be discovered.
And we have some wonderful examples right here at I Want That One!
Come in, have a glass, discover something new and let us share a little of our Bordeaux adventure with you.
Because great wine is always better when it’s shared.
